In general they are at the very least organic, rely on natural yeasts for fermentation with minimal additions in the cellar, sometimes none. The list is subject to change. All prices ex VAT.

Aÿ-Champagne
LES BULLES LIBRE, ROMAIN & THOMAS HENIN
After obtaining his Bts VO in Avize (champagne), he started working with his family on the estate that his father had been farming and running. Romain was inspired to take a different approach though, wanting to work without chemicals and leased 1.20ha of AOC champagne vines on lease from various owners in his area. In 2017 he launched the official conversion of the domain. In August 2018 Romain carried out harvest with his childhood friend Jason Ligas and also Patrick & Justine Bouju for their project 'Sous Le Vegetal'. This experience inspired him to start vinifying the grapes in a natural way without inpurs and without sulfites.
In 2021 he released his first champagne, Gamin Du Terroir and took on the 7ha family estate, vines in Aÿ and Mareuil le which is now certified organic and demeter. In the vines he uses phytotherapy (we make our own fermented extracts and herbal teas and our pickings) and agroforestry (more than 100 trees per hectare planted the first year in all plots.) The grapes are harvested manually and pressed at the estate, intoned directly by gravity and the wine works alone.
Fermentation with native yeasts, aging for one year on lees in barrels, no sulphiting. No input, no intervention, no sulfites during vinification for the whole of the winery. He works in collaboration with his brother who started a cider project also at the estate producing delicious sparkling ciders with no additions. The wines are delicious, showing another side of a region still dominated by brands and big money. These are truly remarkable wines of length and beautiful balance, only released when fully ready. Wines that live up to a special occasion.
We first visited Romain Henin in 2021, right at the start of his journey and have been following the wines whenever we could find them.
Now he is working in conjunction with his brother Thomas who also took the lead on making their delicious cider. It's a privilege to finally bring them to the UK.
L'ODYSSEE PETILLANTE CHAPITRE 2 £41
L'Odyssée Pétillante Chapitre 2, 'The Sparkling Odyssey, Chapter 2' is indeed the second chapter of this wine, from the 2023 vintage, an exuberant, bright blend of 50% Pinot Noir, 40% Pinot Meunier & 10% Chardonnay all from the Henin estate in Aÿ-Champagne. The grapes were pressed direct in the Henin's 4000kg vertical press, a family heirloom, the juice is moved by gravity alone, straight into barrel, where they can monitor the wines carefully, anything that goes off-kilter can be used in their production of ratafia or even cleaning alcohol. The best juice is kept and off course blended into single vintage champagnes like this. After a year in barrel and 14 months in bottle the wines were disgorged in December 2025. As with all of the wines from the estate they are zero dosage, and without any additions.
It's a wine of celebration - exuberant, fresh and alive with pure fruit, but with length, texture and beautiful precision. It opens up beautifully with air, over a few hours and you could even carafe it. Already drinking beautifully, it'll be a wonder with some bottle age.
