All of these wines are produced by small growers who make wines that we find exciting, vibrant and delicious. In general they are at the very least organic, rely on natural yeasts for fermentation with minimal additions in the cellar, sometimes none. The list is subject to change. All prices ex VAT.

AYENT, SWITZERLAND

LUCAS MADONIA

Lucas Madonia started his adventure in Valais at the end of 2021. In 2022 on 1 ha, in 2023 1.7 ha and 2024 1.5 ha. Having spent time working with Marc Soyard at Domaine de la Cras and Tony Bornard in the Jura he started his own project on the steep terraced vineyards of the Valais, located in and around Ayent, between 600 and 820 meters above sea level. The terroir is quite fantastic and the altitude offers the potential to make wine with a beautiful balance of concentration and freshness.

The soils are mainly composed of Schists and Limestone, but also of Loess, Quartz, Clays and others. The terraced vineyard prevents any mechanization of winemaking tasks.

Grass management is done with the backpack brush cutter. The organic treatments (<1kg copper ha) are carried out using a backpack atomizer. The harvest is taken out on the shoulder.

In the burgundian style of his origins he tends to bottle by plot, looking for terroir that excites him.. Destemming is manual and is done through sifting. Macerations last 25 days on average. Aging takes place in old Burgundian barrels from 228L to 600L. The whites are pressed on the day of the harvest then sent in 400L barrels. All bottling is done by gravity from the barrel itself. All wines are without inputs and without sulphites.

ADIEU 2023 £22.50

100% Chasselas. A variety that is much derided but in the right hands can make something quite unique, like this example with plenty of freshness, but tons of citrus fruit and minerals too. 

BLOUGE 2023 £25.50

Riesling, Sylvaner, Cabernet Sauvignon and Merlot. The white and black grape varieties were vinified separately in barrels and then blended at the end of 2023. Light and very aromatic with a beautiful fluidity, this is a delicious red to serve with a chill, awaiting some sun!

TSAVOUISSE 2023 £30 MAGNUM £66

100% Pinot Noir. The fruit is all destemmed by hand and macerated for around 30 days, before ageing in burgundy barrels. It's aromatic with silky black fruit and lithe tannins, totally delicious!

TSAMPON 2023 £32 MAGNUM £65

100% Gamay at an altitude of 630m on calcoschiste. Lucas destems the fruit by hand and macerates for around 25 day, then pressed and put into old burgundy barrels. The 2023 is lighter than 2022, with very pretty fruit and soaring aromatics, lovely with a light chill.

LEPINY 2023 £33 MAGNUM £70

Diolinoir, Gamay and Pinot Noir from the same plot, destemmed by hand then macerated for around 25 days before pressing into barrel. Amazing concentration of fruit, but with freshness and a very silky texture, this is a highlight of the brilliant 2023 vintage.

CHEROUCHE 2023 £35

pinot noir 70% gamay 30% 850m (calcoshiste+loess). Vines are in the same place as the Cherouche domaine which is just named after the area, a really remote vineyard with incredibly low yields. It gives amazing depth of fruit with a lovely texture, this is really sensational and drinking very well already. Very limited quantities. 

VALAIS, SWITZERLAND

DOMAINE OSTIANE

I first met Jimmy Tassan Toffola when he was importing wines to the UK from some of the most exciting producers in France. Always interesting to talk wine with he has a deep knowledge of all aspects of natural wine and an intensity to his thought and craft that I always admired. 

After he departed our shores to delve closer to the source in his native France I wondered when I would run into him again, hearing stories of his travails, working and learning from winemakers across France. On our first visit to see Lucas Madonia, we met Jimmy too, who had fallen for this area and chosen, after looking at a few areas in France to move here, after seeing the incredible potential of the vines, to produce remarkable wines with no additives from the sheer, steep vineyards at high altitude. 

All the estate's vines are managed according to organic farming principles (though not yet certified). A brush cutter is used for grass management and a backpack sprayer for treatments when necessary. Every decision is carefully considered to reduce the impact on the environment.
The plots are all south-facing (adret, right bank) across several villages: from Ayent through Flanthey to Venthône. 
In 2026, Jimmy will be managing 1.6 hectares across fifteen plots with about ten grape varieties. For the whites: Chasselas, Sylvaner, Muscat, Chardonnay, Savagnin, Marsanne & Amigne. For the reds: Syrah, Diolinoir & Pinot Noir. 

The wines are aged in an underground cellar on the left bank in Chippis. The whites and rosés are aged in old barrels (10+ years) previously used for Champagne base wines

For the reds, the barrels are between 5 and 10 years old, sourced in Burgundy and from the Damy tonnelerie.
All wines are vinified without additives nor sulfites.  

THE D'OCTOBRE 2025 £31

Muscat harvested on August 29th. 40-year-old vines on limestone soils from the Sierre rockfalls in the "Les Bernunes" locality (600m altitude). 2 weeks of whole-cluster maceration with light pump-overs. After pressing, aged in 225L barrels (10+ years old). Bottled by gravity directly from the barrel. The intense, beautiful aromatics are balanced beautifully with a stony minerality and freshness from these soils. 

PINOT DE FLANTHEY 2025 £36

Pinot Noir harvested on September 11th. 40-year-old vines on flysch calcareous schist soils. "Bahian" locality at 800m altitude, neighboring Lucas Madonia’s vines. 2 weeks of whole-cluster maceration with light pump-overs. After pressing,the wine was aged in 228L Damy barrels  A delightful Pinot Noir with sumptous bright fruit, a lush soft texture and incredible length. enjoyable now, but will be wonderful with a little bottle age.
