100% Chenin Blanc. Simon's Chenin are rare and mercural, always given longer elevage than the reds in the style of some of the jura producers he learnt from while working at the likes of Domaine de la tournelle. This is a delicious examples of the textured, mineral and exotic flavours he coaxes from the varietal.
