NICOLAS PAVIE, INCIPIT, LACHESIS 2020

From 70 year old vines on granite soils that sit in front of Nicolas' cellar. He gave these grapes 3.5 weeks of maceration in whole bunches, then pressed and and gave an extended ageing of 25 months in barrel. Already drinking very well it is concentrated and yet beautifully balanced with an impossibly long finish. Opens up beautifully with air.
