LAURENT SAILLARD, CA SE DISCUTE 2023

The fourth vintage of what has become something of a classsic from the estate. A collaboration with Domaine De Cambalu, a beautiful organic estate just 15 minutes from Laurent. 50% of this Aunis is a tenturier variety with red juice. In 2022 he chose to de-stem the fruit, giving it a ten day maceration. It was then aged in fibreglass tanks. Clocking in at 11.5% it's featherweight on the palate, with bright, small red fruits and just a hint of the peppery characteristic of the varietal.
