Jérôme began making wine in 2007 on hills around the Layon river which runs into the Loire a few kilometers from the domaine. After learning to make wine on a fairly commercial level Jérôme, under the influence of Babass and Pat Desplats from Domaine des Griottes, decided to make wine in the most natural way he could – he works his Chenin, Sauvignon Blanc and Cabernet vines without using chemicals and makes wine without adding a single thing.

One of the first wines we tried from Jerome was under this name, his incredibly intense expression of Sauvignon and this is the first time we've seen this wine in years. Here Jérôme gently macerates the grapes on the skins for about 10 days, before ageing on the lees. This is bright and fresh with acidity, and you’re met straight away by familiar Sauvignon notes (a touch of elderflower perhaps…). It opens up into denser, richer fruit, with some pithy tannins.
