80% Gamay bought from Domaine De Cambalu again then given a week of maceration. Before bottling the Gamay is blended with 20% Pineau d’Aunis from her Picrochole wine giving lovely spice and a herbal edge. Great on it’s own or works very well with aromatic, spiced pork or lamb.
