100% Chenin from a tiny parcel planted on black schiste. Direct press, short ageing in tank, before bottling before all the sugar has finished to finish fermentation in bottle. It’s then given around a year on the lees before disgorgement. Very mineral and long, slightly herbaceous, this is as much a wine as straight fizz and all the better for it. We got tiny amounts!
