FRANÇOIS SAINT-LÔ, PCC 2023, QUINCE, APPLE, CHENIN BLANC BLEND

Quince, Apples and Chenin Blanc, blended together expertly to create a delicious and ultra refreshing aperitif!

For this unusual but delicious co-ferment, Francois took some of his Chenin and fermented it with chopped quince. At the end of fermentation, he removed the quince.
Then in December he pressed his apples and added it to the pressed Chenin, then bottled it in early January for secondary fermentation in bottle.
