FRANÇOIS SAINT-LÔ, LES POUCHES MACERATION 2021, CHENIN BLANC, MAGNUM

From a parcel of Chenin Blanc planted in an ancient marine bed, the vines around 40 years old. The grapes are macerated whole bunch for around two weeks, very gently before pressing off very slowly in a huge antique basket press. After this the juice was rested on old barrels for just over a year before bottling.

A cooler vintage where fermentations were quick, this is already showing beautifully. Pouring a golden yellow it's saline and mineral with lovely aromatics, a real treat.
