Some words from Jimmy Tassan Toffola on his Domaine and the 2025 vintage: All the estate's vines are managed according to organic farming principles (though not yet certified). I use a brush cutter for grass management and a backpack sprayer for treatments when necessary. Every decision is carefully considered to reduce the impact on the environment.
The 2025 vintage was very mild in terms of rainfall. I treated the vines only three times in total: twice during the crucial flowering period when the vines are most vulnerable, and one last time at grape closure to prevent later disease development. The nights were still relatively cool during the heat waves of late June, and we've had some colder temperatures in August, as well as some rainfall during that month helping to retain some good acidity. The wines have a nice concentration, fruity and have a fresh lively feeling. (similar to 2019's burgundy or Loire I'd say).
Thé d’Octobre, 2025
Muscat harvested on August 29th. 40-year-old vines on limestone soils from the Sierre rockfalls in the "Les Bernunes" locality (600m altitude). 2 weeks of whole-cluster maceration with light pump-overs. After pressing, aged in 225L barrels (10+ years old). Bottled by gravity directly from the barrel on Monday, February 16th.
Aromatic as you'd expect from the varietal but balanced with structure, tension and minerality, this is one of the best Muscat macerations we have tasted. Delicious
